What is a better choice for building a 3 axis DC Servo that uses quadrature encoders for feedback, Teensy 3.0, Arduino Due. or Arduino Mega? Better choice here means hobby application. suitable for a person with low to an intermediate level of programming skills, and doesn't require an optimizing compiler to get the program to work.

Of course I'd prefer for you to buy a Teensy 3.0, but honestly, any of those boards should work fine. Teensy 3.0 and Due are much faster processors than Mega, but the extra speed probably doesn't matter for this application. Even Teensy 2.0 could probably work fine.

There is the obvious caveat that you didn't provide any technical information about encoders, motors or the motor driver electronics, so please consider this reply as generic and unspecific as your question.
