LCD Touch screen in addition to MIDI thru USB

Greetings! Like everyone else and their dog, I'd like to build a set of MIDI pedals from an old set of organ bass pedals. I have all the parts and experience to connect them. However, rather than using arcade buttons or other "stomp" switches, I'd like to control bank/patch/octave/pitch changes from an LCD touch screen attached to my mic stand with a cable running down to my pedals. MIDI would go thru USB to my keyboard or iPad or computer for actual sound generation. My question: can I connect the LCD to one of the serial ports and be able to accomplish what I want and still be able to send MIDI thru USB?If so, how would I do that?
I should mention that I have a Teensy 3.1 board.
