Processing optical linear encoder signals

I'm planing to use Teensy 3.1 to process optical linear encoder signals. More information about linear encoders can be found here: http://en.wikipedia.org/wiki/Linear_encoder

This devices produces sine and cosine quadrature signals either Sinusoidal voltage signals 1Vpp or Square-wave signals. There are available as differential signals (RS 422) with supply voltage of 5V.

My question is, if I provide external 5V supply, would Teensy be able to process this signals?

which output form is provided: you can have sinus or even square wave signals: the last one would be ideal to be processed by a Teensy: Analog output? Not sure. do'm know the conversion rate is sufficient because it also depends on the speed the sensor is travelling
