Just wondering if there is a way to run two of the electret condensers with the Teensy Audio shield since it has one mic input? Could I wire them in parallel?

No, it only supports one microphone.
But the line in pins can support two signals. You'd need to use mic boards with built in amplifiers. Adafruit, Sparkfun and other sell such mic boards, or you could make your own. But a mic won't work directly with those line in pins. You have to use amplifiers.
