When I reach a point where I want the teensy to just stop until I run it again I have been using while(1); but I bet there is a better way. Should I put it sleep or is there a proper command I haven't found yet? The program runs until finished storing data to eeprom and when it reboots it then asks what to do now. I don't need anything to happen until a power cycle.

You might want to think about an external power switch where if you pulse a pin, it turns off the power until a power cycle like: https://www.pololu.com/product/2808.

Snooze library would work to sleep or go lower power at least.
