I'm not sure if this is a good way to use randomSeed and would welcome some feedback. I am using elapsedMillis as a seed value. I time from start until a value is entered using a touchscreen (# of times to loop) and a start button on the touchscreen is pressed and released. Would micros be a better choice or about As effective?

If you are using the Teensy 3.5 or 3.6, you could use the hardware random number generator to set the seed:
