recording in stereo from mics

question:

should we figure out the teensy solution? is it doable for novice? better to stick with the usb audio solution?

background:

we provide an audio only service to the low vision and blind community (it's been called 'facebook for the blind', but i think of it as an audio-only twitter). been doing it through iOS devices, but there are many in the community who cannot afford iOS devices (and android devices are less accessible). purchased raspberry pi and arduino uno to run our software on the base (rpi) and physical controls, mic, audio jack(s) in the remote (arduino). the dumb solution is inexpensive usb audio card (they are small enough to fit in the remote, and can be mono or stereo in). usb audio into the rpi is plug and play, have not figured out if can connect usb audio card to arduino, then bluethooth recorded voice from remote to base (rpi). Teensy shows up a lot in google search. we know software languages, we have zero hardware experience, our users appreciate high quality audio.
