In fact we do not need the AC coupling, it is just "safer" and the 1µF capacitor is just to have a cleaner working point but could be omited. The key is to rise and set the working point between GND and 3.3V so that the ADC could work properly.

I am still wondering if this clipping is a bug in the code or a default of the analogic part...

If my eyes have well followed your wires , your wiring is like on the left side of this image?
Then if you have a few more capacitors and resistors, try the right side schematic, it's quality is not better but it could bring an answer about this saturation/clipping...

yeah currently it's like on the right side. Gonna try the left side setup sometime this week and will report back with data.
