Using High Speed Encoders

Hi,
I am new to the forum as well as on the hardware, I have some knowledge of Arduino. and stuck in one of the tasks.
Here is the detail

I am using Tamagawa encoder 2500p8 which is spinning with a motor on 1500RPM.
there are some voltages supplied on a port/pin of the hardware.
I want to read those voltages while encoder spinning.

I tried it Arduino but somehow it fails more than 1000RPM and when the cable length is greater than a meter.

After a search, I think that Teensy could help me in achieving this.

I would like to know which board I should go for, and what pattern I should follow
