Can I create a guitar Freeze pedal with Teensy?

Hi all, new member here and new to Teensy. I have some Arduino experience, as well as working with ElectroSmith Daisy. A friend recommended I try Teensy instead.

My first goal is to create a circuit that can freeze incoming guitar audio, i.e. capture a snapshot and loop it until turned off. The audio quality has to be quite good (for recording purposes) and the loop should not degrade over time. The benchmark circuit is the Electro-Harmonix Freeze pedal (https://www.ehx.com/products/freeze/). I plan on creating a Eurorack modular version with 6 identical channels, one for each string.

Although similar, this is not a looper or granular sampler application. Can the above be accomplished with Teensy? If so, how many would be required for 6 channels? Perhaps 3 in stereo? Looking at the specs, I'm assuming Teensy v3.6 would be best suited - is that right?
